Sauternes
Very well-known and normally expensive French sweet wine, produced in the Bordeaux sub-region of Graves. Made from parched, partially rotten grapes (due to the presence of Botrytis cinereal - noble rot), this wine is very concentrated and flavourful. Its delicate, floral character and rich notes of honey are much appreciated for ageing spirits.
