White Port
As with other types of port, white port is made exclusively from a combination of indigenous Portuguese grape varieties. In the case of white port, these are pure white grape varieties. These are fairly unknown varieties to most wine drinkers, such as códega, malvasia fina, esgana cão, gouveio, rabigato, and verdelho.
Due to differences in climate and soil types, more than 200 indigenous grape varieties grow in Portugal!
During the port production process, grapes are put into stainless steel tanks to ferment. To this, the wine alcohol aguardiente (similar to brandy) is then added. This stops fermentation early and not all sugars are converted into alcohol. This preserves the sugars and thus the sweet taste in the port!
